Here are some recipes for homemade energy bars. All Janice tested and approved!

Peanut Butter Energy Bars

2 cups Rice Krispies 1 scoop whey protein
1 cup Oats 1 tablespoons flax seed
1 cup dried fruit (apricots, raisins, cranberries)
1 cup chopped peanuts
1/2 cup brown sugar
1/2 cup peanut butter
3/4 cup honey
1/4 cup cocoa

Combine the Rice Krispies, oats, fruit, peanuts, protein powder and the flax seed in a large bowl. Heat sugar, peanut butter and honey in small saucepan over low heat (or in the microwave) until melted and smooth. Stir in cocoa and pour over dry ingredients. Mix well. Pour into 9x13 pan. Press down and refrigerate. Cut into bars.

Bars freeze well.


Peanut Butter Trail Bars


1 ½ cup grapenuts cereal ¼ cup raisins
½ cup chopped pecans ¼ cup pumpkin seeds
¼ cup sliced almonds 7 dried apricots, sliced
¼ cup coconut

½ cup smooth peanut butter
½ cup maple syrup
¼ cup brown sugar
½ cup instant dry milk
¼ cup coconut

Heat oven to 350 degrees. Grease an 8x8 square pan. Combine first 7 dry ingredients in a large bowl. Combine peanut butter, maple syrup and brown sugar in a small saucepan, over low heat, stir until smooth and just bubbling. (about 2 minutes) Add dry milk powder. Stir well. Press into pan. Bake for 30 minutes. Sprinkle on remaining coconut, press gently. Cool for 30 minutes. Cut into 8 bars.

Homemade Power Bars

Ingredients:

1 cup dried figs
½ cup golden raisins
½ cup apricots
½ cup almonds
½ cup dried soybeans
2 cups steel cut oats
¼ cup wheat germ
¼ cup sesame seeds
¼ cup flax seeds
¼ cup honey
1/3 cup molasses
1 tsp vanilla
2 tbsp canola oil
¼ tsp salt
1 tbsp orange zest
½ cup dried cranberries – roughly chopped
½ tsp cinnamon

Directions:

1. Preheat oven to 350 degrees

2. In a food processor puree figs, raisins and apricots, then add almonds and soybeans. Pulse a few times. Reserve.

3. In a Saute pan over medium heat, toast oats, wheat germ, sesame seeds and flax for 5 minutes. Remove from heat and let cool.

4. In a large bowl, combine food processor contents, pan contents and all remaining ingredients. Mix well, then transfer to a greased 9x12 inch baking dish. Bake for 30 minutes. Let cool and slice.

So How much are they? I have made the last recipe and would gladly pay someone else to make them. My time is too valuable. Options I am willing to deal with......

1. Janice makes them and I buy the stuff and Payton and I will babysit

2. Janice makes them and I buy the stuff and Chris looks after Taylor

3. Janice makes them everyone chips in puts in orders and Chris looks after Taylor

4. Party at Chris's ,Janice gets all the stuff, who ever is in comes and helps make them BYO.......

I could go on and on with options but my time is far too valuable so Ill stop ..

Whos in for number 4?????????????????????

I will check with Janice and see if she wants to have Payton over and whip up some energy bars.

Sibo,

Should we try to convince Janice and Payton to make another batch of homemade bars? The last batch was great.

How do those taste? And how long does it take to make prior to going into the oven?

The bars do take some prep time, I would estimate around 30-40 minutes before you put them in the oven. They are super tasty, but don't stick together like a commercial bar. They tend to break apart a bit, so you have to eat them carefully on the bike or stop to eat them so you don't lose half the bar while consuming them.
